The Hillside.

I went to The Hillside this week. I thought about using the ratings to review it.......but........it doesn't feel right. Everything comes out as '4' but only because I think there is a such a big difference between Good and Excellent. The Hillside falls between the two in many areas. I can't go as far as excellent but only because I've been spoilt, and recently. I'd drive back to Lake Vyrnwy in Wales just for a meal at the hotel there. Anyways.............this is about The Hillside. It was really good to see how it has changed since the Hooden Horse days. And it was good to be welcomed in to a friendly atmosphere. The food was very good. Very good. There was hardly a dish on the menu that I did not immediately want to try and those I chose lived up to expectations. Actually I found the menu rather more extensive than I had anticipated. I had the scallops to start (on cauliflower puree with bacon and black pudding - YES!) and the swordfish main. My wife had almost the exact same starter elsewhere in Wales last month only without the black pudding. I reckon the black pudding improves it! And Justin, if you're wondering who I was, well I'm the fussy guy who asked for no caviar. The desert menu was also good. And it was good to finish the evening off in the comfy sofa with a drink. The downside? The swordfish was a little colder than I expected, there was caviar on the menu (I struggle with it morally) and the red rose (okay so it was Valentines Day and the other diners liked it!). Cost? About £40 ph. I will definitely go back again. The whole experience was refreshing, it did not feel like I was in Hertford. There's enough variety on the menu to tempt me back soon and in the knowledge that I can expect the same standard. I would recommend The Hillside, and have already done so today. nice 1. i take u thought the rose was tacky? if you come back any other day of the year, you wont get any thing for free!!!hahaha. your comment about the swordfish, it should have been rareish, so it wouldnt be roasting hot in the middle. whats the moral prob with caviar? the scallop dish is a bit of a classic dish, the combination work really well. THe restaurant normally has a bit more space because it was all 2,s on the 14th we got rid of the large tables and got some more small ones, also we never use tablecloths, but did last nite cos the replacement tables were not friendly to the eye. like you say i dont think the hillside is excellent, i think it is a good quality local restaurant with great ingrediens , well chosen wines, and hopefully ran with TLC. oh yeah nearly forgot, a great looking chef. But how do you define excellent? id class Tom Aikens, Gordon Ramsey, PEtrus, Morgan M as excellent nowhere in hertford, i mean nowhere comes a shade near any of these places. I change the menu quite frequently, so there should always be something different when you return. ps , i see all of your comments, but the rose, i think you are nitpicking sir, and i mean that in the nicest possible way.[:D][:D][:D][:D]

Swordfish WAS good. My wife comes from a family who traded at Billingsgate and she knows a darn sight more about fish than I ever will. So the scallops and swordfish ran the gauntlet! Re. the rose.....I agree.....not exactly a downside.....just not my thing. And TLC...............counts for a LOT.

i own a small part of it. hertford is ok, but i dont feel that in my experience of being here for 2 years is that the town cannot sustain a restaurant of similar quality, i just dont think enough people are interested to be honest

I for one have been fed up with the lack of restaurant choice in Hertford in the past, with more or less only Italian chains or Indian/ Chinese. Once we get a number of decent independent places, people will not feel the necessity to travel to London to eat out. I have still not had the pleasure of eating at The Hillside and unfortunately will not be for a while, as the missus is 7 months gone and finds its uncomfortable to eat out these days.

I think people make assumptions about the quality of the establishment and never venture through the door. I, for example, had not been to The Hillside until this week. My neighbours would like it there too but they had not even considered going. The same with Elbert Wurlings.........I've still got it fixed in my head that it's a kids bar. Word of mouth is important in a place like Hertford, as well as using what little local media we have. Stick with it Justin.

I agree Ewoowar, word of mouth is a very powerful weapon. As I said I have spoken to my pals that have eaten there and have said good things, if it were not for the fact that my missus is up the duff, I would be booking a table there and at the Waterside. I think we could do with a decent indpendant Italian in Hertford, one that sells more than Pasta and Pizza.

Justin..Hertford needs a place like the Hillside, however I suggest that you sort the Website out, either get rid of it or update it..I'm sure you could include reviews from this site. I've been to the Hillside a few times(too few..kids!) and rate it highly but a couple of times i've accessed the website and found it unchanged, this gives one a sense of lack of attention to detail which I know is not the case with your cooking but may dissuade people from further afield visiting.

i agree too. i have gone on about it til blue in the face. out of my durastiction, the other thing that annoys me is that the website says we are closed monday, when we have been open for a year.... its got to get sorted out, and quickly.

It's also about bringing people from out of town. I do like a good restaurant. I visited the Cabinet at Reed and enjoyed that experience but as stated above, the fact the website is not up to date and half the pages do not function is very off putting. Perhaps also some photographic examples of the food could help. I know someone that could provide this service for you - he often takes pictures for Paul Bloxhams articles. still I know you've heard all this before, perhaps your boss should start reading this page!!

I seem to remember this being discussed on another thread a while ago - have a dig through the archive. If memory serves me, I seem to think that while children weren't unwelcome, they weren't particularly catered for (i.e. no kids menus etc.), and that lunchtime might be better than evening.

It's just we normally have dinner out thurs or friday evening to break the week up for everyone. Kids menu not really a factor....my 5 yr old is hooked on masterchef at the moment!More concerned about horrified reactions from mine hosts...which we have had from some pubs that purport to do food.

hi carlos. the hillside will accomodate you if you plan to come early, we dont allow babys and as long as your kids are well behaved , no problem. We have to bear in mind our other customers , as the restaurant is small a baby crying or a kid mucking about can be off puting. Im on holiday next week so i will not be there.[:D]

Justin, I came to the Hillside last night with my heavily pregnant wife to eat. Unfortunately, after reading the menu, my wife decided, although there were things on it that she would eat if need be, she did not fancy anything there. (Personally , I liked the look of everything)What she really wanted was a nice Chicken dish. Basically what I am asking is, why does the menu never seem to have chicken on it?? Its the same at The Waterside as well. (we went there after, left and ended up in Lussmans!) However, we will be back when she decides she wants a steak!!! 5 weeks to go and don't I know it!

[/quot ok, your wifes condition granted, but i feel that chicken is available in restaurants everywhere, and to be honest i cannot find a chicken i am happy to serve. Im working on it though, i used to do a french poullon noir chicken last year. That aside, last night i had seven starters and 9 main courses, which is in my opinion quite a choice, and we had duck on the menu,i dont want to have duck and chicken. I try to use wherever possible free range , organic and rare breeds, and try to find the best possible ingredients that i am happy to serve. What i suggest to you is that you come to the hillside and not go for the usual steak and chicken experience, although its nice, but we offer so much more. Funnily enough though i have some boneless poussin for tomorrow.

duck is red meat and chicken white so why dont you like having both on the menu? not that i would complain as i like both even though i am a very fussy eater im sure i would have had the duck! i do love chicken in a creamy white wine sauce with pepers and basil one of my favorite dishes![:D] have not managed to visit you yet but i will soon and let you know what i think! just dont get defensive if im not happy, as i said im fussy! del hates going anywhere with me as there is uually only one dish or nothing i will eat so your pre warned![:I]

Justin of course you can be fussy - doesn't mean you have to be somebody that only eats the most freshest organic flown in from remote islands top class food! Some people like what they like and that's that - sure you may say 'go somewhere else then' but the point is Dawn can be as fussy as she likes and still like her chicken in white wine sauce [;)]

Justin, Thank you for replying. As I said, I would have eaten everything on the menu. The point of the question was not if you menu was varied enough for most palates, but, why do you not have a chicken dish. Which you answered. You maybe interested to know, that all of the people I have spoken to this weekend re you menu, were in agreement, you food is very good etc etc, but they could not understand why you do not have a chicken dish. But at the end of the day, its your restaurant and your menu so............ But remember even most vegetarians eat chicken!!!!!!!!!!!

But my point is, sureley if you go out to a restaurant, you go to eat the food that the chef has created, lovingly prepared and executed, or do people go to a restaurant, discard the menu and expect something else? You should always keep an open mind when reading a menu,and not make the quick assumption when reading,"oh, i dont like this" or " i dont like the sound of that". You go to a restaurant to eat the food on offer there, so allergys aside you shouldnt really be there if you are not prepared to eat off the menu. Trying, tasting , experimenting, experiencing, its what food is all about. Enjoy.

Justin your original post was what I was referring to, not the quality of the food on your menu. You pointed out that Dawn couldn't be that fussy if she liked food like Chicken in White Wine sauce. This is not correct. [:)]

Chicken in white wine is a bit of a generalisation, considering the sauces in many great chicken dishes are white wine based. For instance I like to slowly roast a whole chicken in a bottle of white wine with herbs and garlic etc, finishing it off by reducing the stock and adding creme fresh. Would that classify as an 80's dish??

thankyou justin i will come along [:D]and i never ask for something off the menu then say but leave something out.[:)] as i said i will always try to have something new when im out and it if has ingredients in that i dont like i still try them in case they are cooked in a way i can come to enjoy.[:)] for example a pub in northumberland i ordered cajun chicken that came with rice i expected that it would be dry and i might not like it but it arrived the chicken was in a cajun sauce with baby veg and for the first time it my life i ate and enjoyed the baby sweetcorn that was among the baby veg[:D][:D]since then i have enjoyed baby sweetcorn in a veriety of dishes.........still dont seem able to stomach them on there own [xx(]but i cant say no to a dish just because there in it! [:)][:)]see fussy but i will try!

2nd visit. 4 people, 3 courses, coffees, 3 bottles of wine and something warming to see us on our way............under £50 per head I say that's good value.

Have persevered with chicken recently and poussin, and tried doing it a number of ways, but, it just doesnt sell. The majority of our customers come to the hillside to try something a little different and i believe they find chiken boring, and i must say, so do i.[:D]

Hmmmm... Tables are too close together, and too small. Food overpriced for what it is, and no atmosphere. Sorry, doesn't get my vote. I wouldn't go again.

My partner and my friends partner are biggish blokes - 6ft 2" and 15 stone each and could not sit without half of their body off the table. The next table was inches away, meaning not only did we invade their personal space, we were also unwitting listeners to their conversations and they to ours. The food was fairly simple - i think we had swordfish, pheasant and can't remember what else (but not memorable says a lot really) and only 2 other small parties were in there - and it was Friday night. Does that help?

depends on what you expected on the food front. As for the size of the place, we cant do anything about that. You obviously thought the food was utter garbage. Interesting!!!

But you can do something about where the tables go.......we went to a restaurant last Sat where it sounded very similar to Nora's experience and we didn't stay simply because of the same thing. We ended up at a restaurant we always go to which is great but we had wanted to try a different place for a change. My partner is also 6' and 15 stone which I wouldn't say was particularly huge but is large enough to need space to be comfortable. At 5'2, it still bothers me to be too close to another table.

My partner is also 6' and 15 stone which I wouldn't say was particularly huge but is large enough to need space to be comfortable. At 5'2, it still bothers me to be too close to another table.

i think the tables are a bit chunky and the chairs dont fit, the decision on furniture was a wrong one. Funny enough we used to have 8 tables and took one away. Recently after over 2 years of trading we have had a few quiet friday nights, i doubt the reason but it is normally very difficult to get a table. Where do you recommend to eat out locally Nora? If you think the hillside is poor and overpriced, im extremely keen on your opinion, as i have trouble trying to find somewhere to go.

It's the Holy Grail, isn't it. (whoops! don't want to get mixed up in that story!) The last good local dining experience I had was at The Brocket Arms in Ayot St.Lawrence last month. Unpretentious, very friendly, good food and fairly priced. Dessert was crap actually, but everything else more than made up for it. I've heard Auberge du Lac is good, but I think a wee bit pretentious for me! The Beehive is pretty good too.

Actually, Justin, there is an idea that i have always wanted to experiment with - a "local elebrity chef" night. By that I mean an ordinary Jo Schmoe like me gets to help you prepare my favourite recipes, yes - me in the kitchen, then I help serve it up to all my (paying) mates and anyone else interested in coming on "Local amateur cook" night. I reckon loads of my mates would come for the pleasure of having me serve up and talk them through my choices. The atmosphere would be great, nobody would blame the restaurant for the menu, and the novelty value would get publicity. I reckon amateur foodies all over Hertford would be queueing up and bringing in all their friends. It would of course be open to everyone (not just my mates) so it would be a varied dining experience. Who knows, some amateur chefs might build up a local following. (COOKING TONIGHT: NORA BATTY)

I know you didnt actually compare auberge to the hillside but its a completely different kettle of fish, I went to midsummer house in cambridge on tuesday, and i dont often have great experiences in restaurants but, this was out of this world and amongst the best food i have ever eaten , well worthy of its 2 michelin star rating,

I haven't eaten there yet, I am sure we will. It is just that we are poor empoverished people (teachers) on limited incomes, and eating out for us is more chicken (note chicken) vindaloo or fish and chips, and not swordfish or pheasant. Are all you guys shareholders in The Hillside or what???? We went for a celebratory meal on one occasion and were seated at a tiny table backing onto the door to the lavatories. So far as the food went - we basically ended up with fantastically expensive fish, chips and mushy peas. The service was pleasant, but the eating area unbelievably cramped. Luckily I knew the lady at the table across the aisle and we had quite a nice chat, but given Mr Trimble and I had wanted an intimate meal, this wasn't quite what we had planned. Another reviewer said it was nice to relax on the sofas with a coffee after the meal - we would have loved to have given that a try, but by 9.00 o'clock the early diners were well and truly rooted in for the night so the rest of the restaurant did not get a look in. I know these are 2 completly different types of restaraunt, but the steak menu is taken from the Goucho Grill which has several branches all over the city and is a fantastic Argentinian steak house. Although not a great difference in price the Hillside and to be fair, the Waterside are more expensive. Saying that the price of a resonable bottle of Sav Blanc in Baroosh is more expensive than All Bar One Butlars Wharf. So I guess we are getting stung everywhere in Hertford. The other thing is that people are still paying the pricein Hertford, so I guess its just a case of supply and demand. We all have the luxury to pick and choose where we eat, I personally have still not eaten here, but have heard good and bad reports (the bad being the space) But I will sample it as soon as the missus is ready after the impending birth of our 1st. And yes, as you may have guessed I am a right fussy bugger!!! I would say that getting stung is the wrong term. If anything its cheaper to buy as a caterter in london than in the home counties. but i dont think the price reflects. as for the gaucho grill, i agree the meat is good, but this is a speciality for them, and obviously they have links with argentinian meat suppliers, but i will say to buy beef from argentina is extremely inconsistent and unreliable as i have encountered, and being a scotsman,from aberdeen. scotch beef is the best in the world

id like to point out, that the hillside is a local neighbourhood restaurant in a pub that is specifically meant to be a place where locals can gather socialise and eat good wuality food at a realistic price. As far as an intimite evening goes, we have never advertised ourselves as that, as is the size, so why did you expect that mrs trimble? Why didnt you go to auberge du lac or zodiac for an intimate celebritory dinner. I believe that the majority of people that believe the hillside is expensive and cramped are naive and extremely ignorant.
Wow Justin you really know how to put off prospective diners! There are those of us that have put our views over to say that we don't like to be spending our hard earned cash in a restaurant that is cramped or uncomfortable to eat in. There also those of us that have admitted to never having visited but at the same time pointed out that we wouldn't like to go to visit a restaurant for the first time to find the conditions in this way. Your response to people's comments are not being taking particularly well - I find this strange. Surely you need the feedback....every business does. If you don't appreciate it then fine but you are really doing yourself no favours by responding in such a way.

I have to agree with Smiley. When I moved to Hertford from Islington I was made up to find a place like the Hillside. I went within the first week and went back several times, everytime we had different people to visit. I have had better for less at some top restaurants but that takes nothing away from what I agree is good quality food in a pleasant and original environment. The only thing that has put me off going back since is discovering this website...

I wasnt comparing the quality of the meat and agreed we should always buy British. But if you really think that the fact that Gouchos charge £5 less for a Sirloin Steak than the majority of restaurants and Gastro pubs in Hertford not a rip off for local customers, then I have obviously got the wrong end of the stick, as I always thought that good City eateries were more expensive than local ones, Such as the Butlars Wharf Chop house, who incidentally charge £22 for a 10 oz Sirloin.

Ok. To be fair, i was merely commenting and not incinuating that anyone was ignorant. It is not meant as publicising, but, of course, we dont please everybody and i want to set the record straight, if you like, to potential first time visitors who may read this forum. I want to make clear what type of establishment we are, and what to maybe evpect and not to expect. I personally do not have a problem with peoples opinions and welcome any feedback, but what i will defend is our reputation and make it clear our aim. We are here to cater for the people and i feel that the persons comments im targetting at are unfair, but accepted, as i believe they take us for something we are not. Justin runs a restaurant in Hertford and, I would say, serves the best quality food. He is entitled to comment on his restaurant on this forum and to reply to comments about his establishment and his work. I can only guess how I would react if my own work was castigated so publicly. Should we expect people to take personal criticism and be surprised when they respond in a manner we do not expect, appreciate or understand? Surely Justin's manner of response is purely up to him. If it impacts upon his business then, again, that is up to him. In the past I have traded posts with Justin on this forum. But then I took the trouble to phone the man, have a chat and go to his restaurant. Personally, I have been to the Hillside twice and will go again. I applaud those who speak their mind, even if I grate against them myself. This forum is full of people who voice their opinions. And it thrives on it.

I will make my final comment on the matter, because I feel I have been rather hostile, and for that I am sorry. Justin, thank you for that lovely spread you prepared for the Hertford Online get together a few months ago. The food was lovely (especially the caramelised pickled onions.... really, they are delicious) The whole thing was great, but then you ruined it by virtually ignoring everyone, turning your back on people who were after all your guests, and being quite rude about the event afterwards on the forum. With a restaurant such as yours, it is not just the food, which I have heard is wonderful, (you clearly take a great pride in what you do) but it is the whole package. Don't be dismissive of your guests. If you are, you will upset them, and no matter how good your food is, people will not want to give you the business. It is also not good business insulting a huge segment of the population. I hark back to your comment about the over 60s. Unless you want to put an age limit on your clientelle to create a young, sophisticated, vibrant ambience. You may find, the very people you are insulting, are the very people who have the money to eat at your establishment. [;)] I would have posted this to your private email, but you haven't included it.

Er… I’m disputing it because one of Bengeobabe’s facts – that the Hillside is the ‘yummiest, classiest’ restaurant in Hertford - is not a fact, it is an opinion and I disagree. The food & wine are great, for sure, but the place has the ambience of a B&B dining room. In fact I would've thought the urine-reeking oldies Justin respects so much would be the main section of the population to prefer it - it certainly had a few coffin-dodgers in on the night I dined there, some months ago. I think it’s overpriced because while the food is very good, the venue does not really provide a special dining experience, in my view. And do they still do those early and late sittings on Fridays and Saturdays? I understand why they have to do that but it doesn't suit me. Happily, the rest of Bengeobabes facts are quite correct - I don't have to go there and there's lots of other places to choose from in and near Hertford. As for the chef – well, aren’t they supposed to be rude and volatile? Imagine a young, good-looking and talented chef who was humble and courteous, it just wouldn’t be right, would it? [:)]

TO at least clear the air. The evening in question. How can you say i ignored everyone? I was working that evening and the soonest moment i had, i came out and introduced myself wholely to the group.I dont know who you were but maybe you went to the toilet or something and missed that? i dont know[?]and also you of course could guess whom i was im sure, so if i missed giving you a personal greeting for that i am so,so,so sorry. Ewoowar that's just the point, Justins posts dont come over very well on this forum and some people are finding them a little rude - why waste precious time in meeting a man that appears this way....[V] Justin if as you say they are meant to be humorous then you need to re-visit the way you write them and maybe add in some smileys here and there! If you think that Justin has been a bit of hot head Chef, think again! Can you imagine if Gordon Ramsey owned the Hillside. I personally think that its good that someone takes a lot of pride in what they do. So what if he has made a few "knee jerk comments" we all say things we regret sometimes. I did it on the Yellow line thread. Keep the comments comming Justin, but maybe reflect on some of the constructive advice, such as you did regarding chicken dishes.

Bit of a harsh comment, wizkid - I didn't think Justin was at all rude that night or afterwards. In fact, my wife thought he seemed "a little shy". Justin - how about applying for the next series of Hell's Kitchen - with 10 celebrity pensioners as your apprentices of course [:D]

I think it's unfair to say that we were Justin's guests and that he ignored us. He simply and very generously made the space available for us and supplied finger food. This was above and beyond the call of duty and I for one am very grateful. I never felt he ignored us. Let's not forget that he was working that night as well!

Went Friday night for the 1st time. Fantastic food, great service and well looked after by Justin. Yes a little more expensive that other Hertford eateries, but well worth it. Only critasism, I could have done with a couple more Scallops, but thats cos I'm greedy!!! Cheers Justin

Morning, was working yesterday afternoon for a change!! I said a little more expensive, but well worth it. On normal occasions we would eat in Lussmans, where the bill is around £40/50 depending on what you have, but I have been known to hit £60 in there. We both had a fabulous evening on Friday an thoroughly enjoyed the food (even the wife!) I for one did not grimace at paying a little extra for what was a special occasion with better fare. So far I think I have recommended to 8 or 9 sets of friend that they go to the Hillside, some have already been but not for a while. I would imagine that most of them will show there faces soon. In fact I will definitely be returning with some of them in the near future. I just have to find a space in my hectic schedule.

Great night had by all on Monday. My parents in law where very very impressed. MY mil had never been there before and expected just posh pub grub. Thank-you Justin for sorting me a fat free meal out, the pork was fantastic, even managed to have the watercress soup minus the cream. The service was top notch, very friendly and helpful. I only have one complaint...........the front door squeaked!!!!

A little bird told me that The Hillside was mentioned in the recent edition of the Michelin Guide as a noteworthy place to dine in Hertford. Justin, can you corroberate this? It's good to have such a great place in Hertford that we can walk back home from without the need for a cab or an allocated driver. We like the layout, the design & presentation of the interior and find it charming (but is the trunk in the sofa area a mite large?). Justin already knows my comments on the saddle of rabbit (yum) and we'll certainly be going back.

We have been in michelin pub guide for the second year, quite a feat, considering we have only been opened 2 1/2 years. Im with you on the whole area by the sofas, its a waste of space in my opinion. We are looking to maybe use this area for dining with tables and chairs to enable us to gain an extra 12 covers, therefore not be under so much pressure to turn the tables over on friday and saturday. however we intend for this area too have more relaxed furniture type of thing to encourage people to also come for a drink, and maybe a charcuterie or cheese board with a bottle of wine, or whatever tickles. My boss hopefully will see sense.[8D] Ps. there are only 500 places in britain to be awarded in this guide. Im quite proud of this. However, we can still improve.

I disagree, so do many others. Are you basing your opinion on one or more visits or have you just had the one bad experience? FYI They actually cooked a meal for my wife that was not on the menu on request, now I would not call that unprofessional or customer-unfriendly. If you really think that an average of £15 for a main course is expensive, can you submit a list of the great places you frequent, that are cheeper???

Menus are on the website, just not updated. I d like to think that its more personal to answer to requests myself. Although the website thing is poor, i think you are a tad harsh by your comments. of course you are completely free to do so, but i believe the hillside is great value for money, and the folk who think that its overpriced,etc etc, are exactly the type of people we do not want. This is my review on the Hillside. I went there on Saturday with my friends, first impressions were that it was very inviting and the staff were accomodating. Enjoyed a superb G+T on the big leather sofa (very nice touch, dont get rid of them!) Then was given the menu, which was the disapointing part, I am not a fussy eater but I found it difficult to find something from the starters and the main course which I found appertising. This was such that Three out of the four people at the table played it safe and had the steak. The menu is too fussy! I think keep it simple and dont mix too many strong flavours in one dish! The atmosphere was great and service friendly. DID NOT like the service charge being added to the bill, I think tips should be deserves and we are turining towards the american way of living. All in all I will return if the menu is changed!

Not keen on that myself, though I've seen it is increasingly common, these days. I doubt that the Hillside do this, but apparently tips (maybe paid in this way) can be legally counted towards wages, so enable some restaurants to pay below minimum wage (I would expect that to be reflected in the service, which is why I think the Hillside doesn't do it). Last Tuesday, we were given the bill without the service charge added, which pleased me greatly, and I had thought that it may have been discontinued - maybe it was because Justin was away...? [;)] We tipped separately beacuse, as usual we couldn't really fault any part of the night.

Every decent restaurant I have ever been to has added service charges. Im afraid if you want to eat in decent places you will have to get used to it. I went with 6 people to Locanda Locateli's last year and the service charge was more than most would pay per head which I found a little unsettling, but you have to expect it these days. At least we do not have to tip everything that walks and talks like in the states!

We Dont have to tip everything YET! I think it has no baring on it being a decent resturant what so ever, as it is what the individual likes and if they choose to return. I still believe that tipping should be down to the service they recieve and not just taken for granted. Any way off subject-thats my review and my thoughts on Hillside.

I have just taken this from the menu on the Hillside. An optional service charge of 12.5% will be added to your bill; if you have not experienced good service, please tell us So it would seem that you did not have to tip there if you did not want to. I have in past refused to pay a service charge as the meal did not warrant it.

I have to admit I don't like places putting a service charge automatically on as I think it gives people the impression the restaurant thinks they will never fault. It's a pressure you put on your customer rather than them being made to feel they have the option. Yes of course we have the option to remove the service charge but the point is to make the customer feel at ease leaving a tip or not. Many people (including my partner and my father) feel uncomfortable at telling the staff they will be removing the service charge and causing a 'scene'

We charge a 10% optional service charge, but this has been discussed on here too many times too start it again. I find it hard to understand your view on the food being too fussy. Wild Mushrooms on brioche Confit Lamb with red cabbage Butternut squash and cumin soup Spiced squid with lime. Just a couple of dishes that for me could not be simpler, my philosophy has always been simplicity is genius, and i think that what we do is along there. YOu say you are not a fussy eater, but you sound like a difficult eater, and would love to know why, and what, you think is too fussy. I was not present that evening but im sure that my colleagues would be more than happy to prepare a more simplistic meal for you. Nevertheless this is your opinion, and grateful we are for it, but so many others enjoy and return again and again, to differing menus throughout, but to the same style. Its unfortunate that you shalln't be returning to enjoy the experience that so many others do.

Service charge is a total liberty. The majority will pay well for the service they get and probably getore if good. If the service is good, even if the food is C**P we should be able to be able to pay for the bit we apprecite,not for the others....

4th or 5th visit to this restaurant at the weekend. Absolutely nothing I could fault about service, food, wine, coffee. Disappointed the service charge is added on automatically but that's another story. I would rather make my own judgement. I can recommend the venison to anyone who's visiting shortly. It was superb. Loved the horseradish mash as well. Next time we go, I think we'll share the cheeses. Someone else was having them and they looked fantastic. No watery, tasteless tomatoes to be seen at all. Would love to see you in bigger premises so you can show your skills off to more people - as long as you stay in Hertford so that we can still walk there.

Thank you very much. I wont comment on service charge. Saturday was an absolute nightmare, my fryer packed in at 7pm and my fridge blew up at 8pm. i had my sparky friend in my sweatbox tiny kitchen fixing fridges in the middle of service, i couldnt move! but glad you enjoyed everything, venison comes from a contact in puckeridge and all my cheeses are tryed before listed, and i rotate them as often as poss. You should have popped in to kitchen to say hi, please do next time. Justin

Had my 4th visit to the Hillside last Wednesday, unlike most on here for me it is expensive but saying that you don't walk out of the place thinking you've been done its worth every penny! Me and my partner don't bother with any other resturant in town now unless its a curry, theres no point they never live up to the Hillsides standards. The staff are fantastic and so is the wine menu and it caters for us both (me being a vegetarian and my partner enjoying red meat and seasonal stuff like partridge and venison). Infact the only thing I dislike is the other customers who feel the need to project there voices when discussing what to order or how big there wallets are. I only wish I had a big enough wallet to go every week![:)]

proudly went to pick up my copy of egon ronays 2006 guide today. I have just put a thread on-line about discount cards to keep small traders local by giving the customers and incentive to shop locally. Something that Hazlemere are starting. Would you consider this for dedicated customers as well as other businesses? Just thought Cafe Nero were doing a similar thing with coffee - buy 9 get one free!

we have such thing in place, but on the whole, the incentive as you say should be quality and value for money. not discount in my opinion.
