Rib of Beef
Hi, I want to cook a nice rib of beef this evening. So, can anyone recommend a 'quality' butcher local to Hertford where I can get a decent cut from?

or Sele Farm if you want to stay in town we always get our meat from there and it is always very good

Foxholes Farm - always had great beef from there. Failing that, the butchers in Digswell is excellent.

Its just off of the A602 (Tonwell-Watton Road) take the next right past the Dane End turning (there is a big sign) down the Farm track for about a 1/4 of a mile. I always used to get my beef from Picketts until they did not have what I needed and I tried Briget B's and was converted, excellent meat, excellent service and a reasonable price. The kids love it too as they can see the cows from the car park.

Temperature Guides
To roast beef
Choose sirloin or wing rib (three ribs) on the bone. Pre-heat the oven to gas mark 8, 450°F (230°C), season the meat with salt and pepper and rub the fat with a dusting of flour and dry mustard. Roast at this temperature for 20 minutes, then reduce the temperature to gas mark 5, 375°F (190°C) and continue to roast – basting at least three times – for 15 minutes per lb (450 g) for rare, plus 15 minutes more for medium, and another 30 minutes for well done. Allow to rest in a warm place for 20-30 minutes before carving.

I went for the Digswell butcher in the end. As we're thinking of moving there it made sense to try him out. It wasn't cheap, but it was bloody nice. I don't know where the 'three ribs' recommendation above came from, but the guy said that if I got a large single rib, that would be plenty for 4 people. He wasn't wrong, as we didnt even get through half of it. Superb beef ciabatta's for me for the next few days!!
